Spaghetti Squash, also called Vegetable Spaghetti, is grown for it’s stringy, pasta-like flesh that can be used as a low carbohydrate alternative to spaghetti. Picked when mature, the skin will turn a deeper yellow colour. Scooping out the flesh after it is roasted will form strands much like spaghetti. Goes great with bolognese sauce or a sun-dried tomato, mushroom and bacon sauce, or any pasta sauce of your preference. The seeds are also edible roasted.
