Japanese Pumpkin (Cucurbita moschata) is a member of the cucurbit or pumpkin family. Pumpkins contain a high level of beta carotene, an important antioxidant that is converted to vitamin A by our bodies, and helps to prevent degenerative disease. It is a nutty-flavoured pumpkin with yellowish/orange flesh that is soft and drier than most pumpkins.
