Purple Kohlrabi Recipes
Kohlrabi is a member of the Brassica family, which includes cruciferous vegetables like cabbage, kale, collard, and Brussels sprouts, and it has a dense, turnip-like bulb at the base of the leafy greens.
The taste and texture of the bulb is similar to a radish; it’s crisp and crunchy but more peppery than sweet.
It is low in carbs and calories. A cup of cubed or sliced kohlrabi has just 36 calories and 8 grams of carbs. It is fibre-rich and low in sodium, but has a potassium content that is higher than bananas and vitamin C content higher than an orange.
It is also known for its anti-inflammatory and anti-diabetic properties.
